Ah I just added a section about that. The reason that Persona has all those extra options is because it is multi-functional. It is not just used for age verification. It is also used for instance by banks to check customers before they open an account.
Discord set it up so that it's impossible for it to even gather the fields in the photo ID just the photo itself and the date of birth with the rest blurred out, and never saw either of those itself. OpenAI retrieves just the date of birth and nothing else and keeps that for 7 days.
But other clients need all those fields in order to vet an applicant for a bank account say. And it is widely used and trusted for that purpose.
